Hot days are coming and we want to eat lighter meals so I bring you this fabulous idea to make a super express carrot and pumpkin spanish omelette! A delicious spanish vegetarian omelette ideal for your children to eat the vegetables that cost so much effort!
This spanish vegetarian omelette can be totally vegetarian or give it a fun touch with a surprise ingredient (Vienna sausage) to convince the little ones to eat without problems. I know that maybe you are used to the classic Spanish omelette but I think it is good to vary a bit, right?
I know you will not regret this recipe and even more so when it is prepared with ingredients such as carrots or pumpkin that provide so many benefits to our body. So go ahead and try it because it is important that children get used to eating variety and many colors from an early age and have a natural view when they grow up.
Let’s talk about the recipe:
It is a super easy recipe to make and very simple. To prepare it, no effort is required, you just have to scratch the carrots and pumpkin that we will then sauté a little with some ingredients of our preference to give it even better flavor.
As I already said, vienna sausages are an extra ingredient of your choice. This Spanish vegetarian omelette can be exclusively vegetarian, omitting this ingredient. Also, if you do not have a pumpkin or carrot, you can make this omelette exclusively from the ingredient you have at home at that time. I’m sure it’s going to be great anyway!
Spanish vegetarian omelettes are an ideal food for those hot days in which we want to make light lunches. It is also a very nutritious and super express food for those days when you are short on time but want to eat healthy. They go perfectly with a fresh salad or with some white rice.
