Preparing homemade hummus is simple, since it does not have complications in terms of its preparation. The ingredients used are just a few and often used, easy to find in any market. In addition, you can make modifications to the recipe according to preference or need with not inconvenience.
Although it is a quick recipe to make, you will need at least one kitchen element: blender, food processor or hand blender. In this way, the chickpeas are completely crushed, and a homogeneous cream is obtained as a result. Keep in mind that in order not to clog the machine, it is necessary to stir and add olive oil or water
There is a particular hummus consistency, which can be more or less dense. In addition, there are those who prefer hummus with a good presence of olive oil or a little more acid. And others in which a particular seasoning stands out. For this reason, the quantity of the ingredients will be graduated in a personalized way and according to the particular taste.
About the ingredients:
The main ingredient is chickpeas, any kind regardless of their variety, whether they are dried or canned soaked. In fact, both ways have their advantages. On the one hand, using canned chickpeas speeds up the preparation, saving the time of prior hydration and subsequent cooking of the chickpeas.
While when using dry chickpeas, all their properties are used intact. Plus, you get a useful amount of aquafaba. Briefly, chickpea hydration takes a minimum of 4 hours, ideally 8 and a maximum of 12 without losing its properties. After hydration, they are cooked in boiling water for about 1-2 hours.
Other notable ingredients of hummus, although not necessary, is Tahini or sesame paste. Which is bought ready, or is prepared with toasted sesame seeds and olive oil. Likewise, another alternative to provide this distinguished flavor would be to add the sesame seeds directly to the blender along with the rest of the ingredients.
As a last mention are the seasonings, whether fresh or dried. The classics, for example, salt, cumin, paprika and garlic. This time I have added lemon zest and a touch of fresh mint that has been excellent. Also, you can add herbs such as parsley, cilantro or another species of your choice, either for superficial use or in the preparation.
