Today I bring you this wonderful version of butterless gluten free pepas cookies. A fantastic recipe specially designed for those who cannot consume ingredients with gluten or butter. Let’s talk about the recipe:

This recipe is simple to make, it does not require a great experience for its elaboration. The ingredients used are few, frequently used and easy to find. This time I made these pepas cookies with quince paste. But you can use other sweets such as sweet potato paste, milk caramel, or some other thick consistency.

About the ingredients:

The cookies are made with gluten free all purpose flour, which you can buy or make yourself. Maybe you have the ingredients and can make it, as not only simple and has few ingredients, it can also be cheaper than buying it depending on where you live. The fat used in this opportunity is sunflower oil. But you can replace it with any gluten free ingredient, be it margarine, butter, coconut oil, etc. As a result, depending on what fat is used, its texture can change. Therefore, the type of ingredient used to prepare a recipe must be considered.

About the sweet paste:

The type of sweet paste that is used is at election. Among the available options can be pastry sweet milk, quince paste, etc. But the choice of it should be considered, since the candy you use has to be thick in consistency. In this way, being thick, it will facilitate the filling and its consumption and storage will be more thorough.

To fill these cookies and make it practical, you can use a pastry bag. Previously, before filling the pastry bag, you have to soften the sweet, in this way it is like a cream. Generally, this type of sweet paste is sold in blocks, so to obtain a creamy consistency, it is necessary to soften before using it.

Softening the sweet paste is not difficult, since it only needs to be exposed to heat. For this, there are some options, among which is the traditional way in a water bath or using the microwave. Whatever the choice, do not forget to stir to homogenize or prevent burning. If it is very dry, the solution is to add a little water or milk according to the type of sweet.

About the dough:

One of the secrets to get some good cookies is the consistency of the preparation. The dough needs to be slightly sticky and not completely dry. So when shaping these cookies, it’s inevitable that it will stick to your hands a bit. However, there is an alternative to do this without getting dirty.

As a first option, make small balls of dough and place on the baking sheet. Then with the finger, press in the center of the dough to hollow out and proceed to fill with the sweet. Option two consists of making a roll with the dough, cutting slices, placing it on the baking sheet and making the hole in the same way as the first option for its filling.
