Of Italian origin, the calzone whose preparation is similar to a pizza, but closed, resembling a large empanada filled with mozzarella or ricotta and tomato. However, there are other types of fillings that use from different kinds of meat to vegetables. Generally, its cooking is baked, although there are also fried ones.
Let’s talk about the recipe:
Preparing this calzone is easy because it does not present complications in terms of its preparation, and it has more than one advantage. The ingredients are just a few, frequently used and easy to find in any market. In addition, you will be able to change any of them according to preference or need without inconvenience.
The flour used on this occasion is 0000 flour, commonly known in other countries as all-purpose flour. In general, depending on its brand, it can absorb more or less amount of liquid. That is why I recommend incorporating gradually. As a result, keep in mind that the smaller the volume, the smaller the final product.
The amount of filling to use will be to taste. But, for an exquisite, forceful and satiating result, it is not recommended to skimp. Since it looks similar to a large empanada, if it doesn’t have enough filling, you end up with an unappealing calzone. So, feel free to use a good amount.
About the filling:
This calzone has chicken as its main ingredient. Which you can buy a piece in particular or also reuse from a previous preparation. In general, what is most often used is the breast because it is lean and has a profitable amount of meat compared to the rest of the chicken.
The method chosen for cooking the chicken is boiling, to shred it later. Although it is not the only way in which it can be integrated into the preparation. Because another option would be to cut into small pieces and sauté together with the rest of the filling. It is worth mentioning that the final result will be affected depending on how you proceed in the recipe.
Regarding the rest of the ingredients, one in particular stands out exquisitely, the caramelized onions. Resulting in a perfect combination of flavors and a touch of distinction as a whole. However, you can replace it with another ingredient or change its cooking method to preparation times do not extend.
The other ingredients, but to a lesser extent, but not less important, cheese, which can be the classic mozzarella, semi-soft or creamy cheese, etc. On this occasion, I chose a mixture of string cheese called four cheeses, which turned out spectacular. Lastly, I opted for the fresh tomato, as its flavor is worth taking advantage of when it is in season.
About the dough:
Once the dough has risen, stretch it into a circular and thin shape as if you were going to prepare a traditional pizza. Then place the filling covering only half of the dough. Next, with the free end of the dough, cover the half that has the filling and seal the edges by pressing with your fingers Lastly, make a fold with the sealed edge and place on an oiled baking dish.
About Cooking:
Finally, the calzone is baked at a high temperature exceeding 200 °C – 392 °F for approximately 20 minutes. To obtain a good result, it is advisable to adapt the cooking according to the type of oven, since each one has a particular and unique cooking.
