As my first post about cookies, I have decided to share this first recipe. With which I have been working recently, since I started in the world of cookies decorated with royal icing.
I have had many attempts, some failed, but over time I improved and learned, and I am still doing it. Every job, every order for me is a personal challenge. That is why I decided to open this website to share and teach my learning with you who are my readers.
I love cooking, I love improvising and innovating and most of all I love being able to share my achievements with you.
About the dough…
This cinnamon cookie dough is ideal for making cookies decorated with royal icing. Actually, I have tried many recipes, some with more butter and others with less. But I think this recipe in particular has the right proportion of butter to make it easier to work with and have a more than acceptable result.
With this I am not saying that the others are not good recipes, just that in my opinion and even more so if you are a beginner, this recipe will suit you like a glove.
This cinnamon cookie dough has a nice flavor. In fact, working with royal icing is comfortable, they don’t break easily. Which is advantageous because it is not necessary to be careful when handling it (because it does not have a lot of butter). Actually, you can work more relaxed without being so afraid of the cookie breaking when you decorate it. They have a soft texture because icing sugar is used and not regular (granulated) sugar. This wonderful recipe is worth trying.
To keep in mind…
- Respecting cold weather is crucial for this type of dough. It will be better to work.
- As it is a butter-based dough, it is always advisable to take it out of the refrigerator for a little while before working with it. Well, if we want to stretch it right away, it is possible that it will break, so let’s not be anxious.
- When rolling out the dough, do not leave it too thick, because when you bake them they will grow, and after decorating them with icing they will be a little difficult to eat. Furthermore, if we use some cutter for characters that have too many details, these will come out very marked, they will have deeper reliefs, which will require more icing. And the more royal icing, the harder the cookie will be too.
- Do not bake for too long, so they do not brown much. As soon as you barely notice the golden edges, remove from the oven.
