INGREDIENTS
- 500 g mashed potatoes
- 200 g whole wheat flour
- 1 Egg
- 1 Tbsp baking powder
- Nutmeg n/a
- Salt n/a
INSTRUCTIONS
- In a bowl, place the mashed potatoes cold. Add the egg, nutmeg and salt. Stir until all the ingredients are well combined.
- Incorporate the whole wheat flour together with the baking powder little by little. Round the dough and let it rest for about 10 minutes (avoid the temptation to add more flour than the recipe says).
- To make the gnocchi, take a little dough, make some rolls, cut portions and then with a fork or a gnocchi board give them the final shape. Sprinkle superficially with flour to work better, but do not overdo the amount of flour (even if it feels like it sticks to your hands). If you want to obtain light, soft gnocchi as a result that melts in your mouth and not those that fall heavy.
- Cook in plenty of boiling water, stirring a little to prevent them from sticking together. Once they float, leave for a minute and remove. Avoid neglecting because they can be overcooked quickly. Place with the sauce of choice, stir a little (do not leave them in the pot without anything because they will stick together).
NOTES
In this recipe, I made double the amount that day. With the quantities given, 4 or 5 people eat.
