Locos Por La Comida proposes this week to prepare an exquisite pumpkin pie. Just as delicious and nothing to envy the classic potato pie. Ideal for much lighter but at the same time forceful lunches and dinners. Also, a good meal to accompany by different fresh salads. Cheer up for this complete version of color and nutrients!
The pumpkin, being rich in water, low in carbohydrates and fats, makes its caloric intake scarce. In turn, it provides a significant amount of nutrients that benefit and strengthen the body, both in disease prevention and in improving its functioning. Due to its high concentration of fibers, which facilitate digestion, they help regulate the intestine.
Let’s talk about the recipe:
Although preparing this recipe is simple because it has no complications in terms of its preparation and it has more than one advantage, if it takes time. The ingredients used are just a few, frequently used, easy to find in any market. In addition, you can change any of them according to preference or need without inconvenience.
About the ingredients:
As the main ingredient, the pumpkin, which you can use any type of orange pulp. Indistinctly, due to its high concentration of water, it is advisable to cook in a way that does not acquire more liquid. Therefore, it is recommended in the oven, microwave or steam. In this way, its nutrients are better preserved, and its flavor is also enhanced.
About the filling:
The filling is mostly made up of minced meat. Although, it is not the only type of meat that could be used. Since another option could be chicken, fish, pork, etc. Similarly, use another type of ingredient such as textured soybeans or legumes for a full vegan version.
There are additional ingredients such as green or black olives, raisins, hard-boiled eggs, cremoso cheese, capers, etc. On this occasion, I made a filling similar to an empanada filling, which together with the pumpkin made it exquisite. Still, you can add, omit, and replace any of them based on preference or availability.
Assembling the pumpkin pie:
In Argentina, it is customary to use two layers of purée for one of filling for this type of pie (see photo). However, you can use a single layer of pumpkin and make a smaller amount of purée. Those who prepare the simple option can add a base of pie crust, then place the filling and finally the layer of purée.
About Cooking:
Finally, even though all the ingredients are fully cooked, the pumpkin pie is baked to heat, gratin or simply firm up the preparation. This way, by being compact, it facilitates its distribution or storage. It is recommended to use a medium low temperature for approximately 30-40 minutes.
